To get the classic taste of the Nigerian Tomato Stew, it is better to use tasteless and odourless clear oils. When preparing this stew for your guests, friends or a group of people with authentic Nigerian taste buds, it is recommended that you use clear oils that meet these 2 criteria.
I use the vegetable oil sold in Nigeria and Sun Flower oil because they meet these 2 criteria. I am sure there are other oils in the list that meet these so go with the one available where you live. If I am in the States, I will use Canola Oil because having tasted a meal it was prepared with, I would say that it is tasteless and odourless.
When preparing this stew for just you and your family, you can use any oil that you and your family have grown to love. Just make sure that the oil has a high smoke point. The smoke point of an oil is the temperature at which the oil starts to produce smoke when it is heated up. The higher this number is, the better suited for frying the oil will be.
The Nigerian Tomato Stew is fried at about 190°C (375F) so ideally, it will be safe to use oils with a smoke point of at least 200°C (390F). Sunflower oil has a smoke point of 220°C, Vegetable Oils have a smoke point of at least 205°C (400F) while Extra Virgin Olive Oil has a smoke point of 160°C (320F) making it unsuitable for frying this stew. The good news is that the refined olive oil, the one that is light and does not have such a strong taste of olive oil has a smoke point of about 230°C (460F).
