Ofe Ugba is a soup native to Imo and Abia states of Nigeria and is simply Okra Soup cooked with shredded oil beans. You can call it Ofe Ukpaka or Shredded Oil Bean Soup.
Ingredients
For 4 servings, you will need:
- 20 okra fingers
- 1 cup of ugba (milk cup is ok)
- 2 pieces dry fish (dry cat fish or mangala fish)
- 2 pieces stockfish (dry cod fish)
- 1 smoked mackerel (smoked titus fish)
- 2 cooking spoons palm oil
- Habanero pepper (atarodo, ose oyibo, atarugu: to taste)
- 1 handful crayfish
- 1 piece of ogiri okpei (dawa dawa, iru)
- 1 onion
- Garden egg leaves (alternative: spinach)
- Salt (to taste)

Yes, you can Amaka. It is traditionally prepared with garden egg leaves, you can also use that if you have it.
Can I make use of ugu leaf or green leaf instead? Green leaf that is used to prepare porridge yam. Agworagwo ji.
Nkechi, yes you can use ugu. I wouldn’t use green amaranth because in Igboland, we do not use green amaranth to cook soups. 🙂

Pls wat does ugba nd ogiri okpei means in english
Faith ugba is oil bean (cooked and shredded) while ogiri okpei is made from locust beans.
There’s another type of ogiri (ogiri Igbo) that is a paste and has a more pungent smell than ogiri okpei. That one is made from castor seeds.
