Nigerian Soups form a major part of our gastronomy. Where I come from, a new bride’s cooking prowess used to be judged by her ability to prepare Nigerian Soups. Knowing how to cook rice, rice and more rice dishes referred to as nni ndi ocha (white man’s food) by grandmas was not enough in those days.
So what is that Nigerian soup that has been dealing with you since time immemorial? You have tried everything possible but you just can’t get the preparation right. Even your family has advised you to stay away from making that soup because you can never win. 😉

It’s ewedu soup. No matter how I cook will not draw. Also ogbono soup mix it okro and ugu.
My Difficult Nigerian soup to cook is ‎Ofe Nsala, Not because am not from the Igbo tribe, since I cook egusi and others so well but the steps and procedures r most necessary to be strictly adhered to.
When cooking other nigerian soups, you can forfeit one ingredients for the other! But with Ofe Nsala !!!(The White Soup That lingers in our memories for a long time)‎ that rule doesn’t apply….
Ofe Nsala is loved by many and can be eaten with or without solid.
Even though there r similars of other nigerian soups across the continents…. Ofe Nsala can’t be remixed…. from encouragements made with it like Fresh fish, Chicken and the rest….. I can’t get tired of eating it. I am stil learning it,most especially from your blog! I will keep trying and trying!

Ufuoma the way you make this Nsala Soup sound mmmh are you sure it is the same Nsala Soup that I know?
This soup is one of the easiest soups to prepare, in fact one of the few Igbo soups you can get away with adding all the prepared ingredients at the same time and letting it cook. 😉 Once you use fresh catfish for it, the classic taste is sorted then add other necessary ingredients to complete it.
Are you sure you are not being too hard on yourself per not knowing how to cook it? Oya cook it and bring some tasting for me, I am sure you cook it well. 😀

Most difficult soup would b Owho. My brothers would always say “stick to the regular soups and leave the traditional soup for the pros.”

A. Atama Soup
B. Oha Soup
C. Bitter Leaf Soup
D. Isasa soup
These will test you. I advice you use male goatmeat to make it, it covers up some flaws in the spices and prep system
